A cocktail bar in the forest.

Join us on a warm summer evening for a drink under the forest canopy. Chef/Sommelier Robin Kort’s summer wild harvest will be extracted into syrups, tonics and bitters to make an immersive forest cocktail menu. Registration will include one cocktail of your choice and a half hour walk through the forest with a wildcraft expert to identify all the edibles we encounter.

Cocktail Bar Menu

  • Elderflower + Sweet Cicely: Gin & tonic, lemon, sumac, evergreen tip sugar rim
  • Savage Bourbon Sour: Dandelion, fig leaf bitters, Labrador tea, lemon simple syrup
  • Wild Tinto de verano: Oregon grape juice, bitter cherry, lemonade, red wine soda
  • Kombu Caesar: Vodka, tomato, sugar kelp, furikake rim, fiddlehead pickle
